Is it just me or is the Chinese language imprecise for certain things?

As someone who likes to cook I frequently run into problems with buying cooking ingredients because the name of plants in Chinese seems kinda imprecise.

The last outing I had today was trying to find parsley, I went to one store and dropped the three names for parsley I know 欧芹,荷兰芹 and 洋香菜. They didn't know what the first two were, when I said 洋香菜 they took me over to some 香菜. But 香菜 is not parsley it's coriander. Which is a completely different herb.

Next I try an international market and ask for 欧芹 or 荷兰芹, They tell me they don't have those. I spot some on the shelf that even has the English "Parsley" on the label and I say "So what's that", and I'm told "香菜“. I smell it and I can tell it's not coriander and is definitely parsley.

I take it home, taste some and confirm it's parsley. Flip the packet over and it's even been mislabled from the factory as 香菜...

How do Chinese scientists cope? So they have to learn the western names for stuff?
