Recommended Mandarin schools in Taipei?

Hey!

As per the title, I'm interested in finding a school to study Mandarin Chinese in Taipei, Taiwan.

I moved here in February to start studying for a bachelor's degree. The program is taught in English, and the required Mandarin courses are kind of a joke as far as actually learning to use the language is concerned. (I haven't taken them yet, but I've met peers who have, and they clearly haven't gotten much out of the classes.) Over my summer break, I'd like to spend 2-3 months doing "intensive study," that is what I've heard folks call "classes every day."

My level is very much "beginner," I can introduce myself and besides that... I can provide some scraps of commentary like "very good" and "go, go!" that I've picked up from being a part of a sports team that's mostly locals. I really want the structure of a classroom to build up a good foundation for listening and reading/writing skills. I think my self-learning will be a lot easier once I get the ball rolling.

The places I've heard mentioned/recommended by people in person are NTNU, NCCU, "Fu Ren" and one other that's escaping me at the moment.

Also, if you folks know anything about receiving a scholarship for this kind of study, that would be appreciated. I apparently screwed myself in a really frustrating and technical fashion by coming to Taiwan before applying for the MOE scholarship. One of the requirements is that you have never studied in Taiwan before, and since I've started studying for my bachelor's degree... I can't even apply for a scholarship towards my bachelor's degree. I haven't verified, but I'm pretty sure it even disqualifies me from a MOE scholarship for a language program.

From what I can tell, most scholarships for US students at universities abroad require you to belong to a US university and just be spending a "semester abroad." (Or two in some cases.) Even finding financial aid has been a headache. So, it would be nice if anyone could help me sort any of that stuff out. Haha
