I want to learn Chinese. Where to now?

In the future I wish to become an airline pilot, and I believe it is advantageous to understand the languages of regions where I’ll be flying. Asia is a strong, ever growing continent economically and China has driven that to an enormous extent. As such a move to China, or a Chinese speaking nation is definitely in the picture.

So my question: I understand there are different types of languages in the Chinese family. Which should I learn, and how should I go about it?
