Just install VLC, under "Media" (basically the file menu) select "Open Network Stream" and just paste in the whole YouTube URL. Speed control is under Playback / Speed. The audio at 0.5x is much clearer than the native YouTube player. It's not choppy and there's no echo.
Unfortunately captions are not as easy. You need a tool to rip YouTube captions to SRT files (maybe someone can suggest one?) and you have to apply them manually via Subtitle/Add Subtitle File for each video. You will also have to go to settings and change the subtitle font (under Tools/Preferences/Subtitles) to something that has CJK glyphs (and restart VLC).
