simple question on using ...吗? vs X不X?

你好

I just starting learning Chinese and there's something I'm wondering about. I learned that 吗 is used at the end of a sentence for a binary yes/no question (like 辣吗?) . However, you can also ask a question using the negation 不 (like 辣不辣?). These essentially ask the same question.

My question is when is it ok/normal to use either, or are they mostly interchangeable?
