How to properly say lunch in Chinese

I see two different translations for "lunch" into Mandarin Chinese: "wufan" or "wucan". Which one is more correct? When would you pick one over the other?

My Cantonese-speaking wife says that it's weird to say "wufan", I should either say "zhongwufan" or "wucan". But she couldn't really explain why.
